WHYPAYOTE?

Every project begins with an idea. Ours began with an emotion.

For as long as we can remember, we have loved the spirit of Mediterranean paillotes. Those elegant beach houses found along the southern coast of France, where natural materials, simple architecture and generous cuisine create an atmosphere that feels timeless.

When we first imagined PAYOTE, our dream was to create that spirit by the sea. As the project evolved, we realised that what truly inspired us was never the beach itself. It was its way of welcoming people.

PAYOTE CITY became the first interpretation of that vision. Not a copy of a Mediterranean paillote. But a contemporary interpretation of its way of life.

Because a paillote is not a place.
It is a way of welcoming people.
And that is the spirit we wanted to bring to PAYOTE.

We come from two different countries. Two different cultures. Two different stories. Yet we share the same vision of hospitality. To us, cooking is never just about preparing food. It is about welcoming people. Sharing moments. Creating emotions.

As we cooked, discussed and created together, one idea became obvious. We did not simply want to open a new place. We wanted to create a universe.

Every cuisine has a story. Some are born from a country. Others from a region. Azuryan Cuisine was born from a meeting. The meeting of two chefs. Two cultures. Two journeys.

When we started cooking together, we quickly realised that we did not simply want to combine our influences. We wanted to create a new culinary language. A language capable of telling our journeys, our origins, our passion for local products.

That is how Azuryan Cuisine was born. A cuisine that belongs to no single country. It belongs to a vision — shaped by our experiences, inspired by the cultures that influenced us and deeply rooted in the richness of Antigua and the Caribbean.
